The grinder setting is the dial nobody touches

Most people never touch the grinder setting on their machine. It is the fastest way to change how your coffee tastes – faster than changing beans.
What the setting actually does
A finer grind means water passes through more slowly and picks up more flavour. A coarser grind means faster flow and a milder cup. That's the whole principle.
- Coffee tastes thin or sour? Grind finer.
- Coffee tastes bitter or harsh? Grind coarser.
- Cold Brew? Go coarser than you would for espresso – cold water needs a bigger surface to work on.
How to adjust it safely
On most JURA machines the grinder is adjusted with the dial under the lid, and it must be turned while the grinder is running. Turning it when the machine is idle can damage the burrs. Machines with the P.A.G.2 and P.A.G.2+ grinders handle this differently – they park the grinder between cups and can be set from the display.
Change one thing at a time
Adjust by one step, then make two cups before judging. The first cup after a change still contains coffee ground at the old setting.
Dark roasts generally want a slightly coarser setting than light roasts. If you switch beans and the coffee suddenly tastes wrong, the grinder is usually the reason – not the beans.
